Ingredients
- 110g pack Waitrose tomato and onion couscous
- 200g Greek feta, cubed
- 1 red onion, thinly sliced
- ½ a cucumber, thinly sliced
- 270g cherry vine tomatoes, halved
- 30g Greek Kalamata olives
- 1 tbsp red wine vinegar
- 1 tbsp extra virgin olvie oil
- Fresh mint, chopped to serve
Method
1. Prepare the couscous according to the pack directions, then mix through the feta, red onion, cucumber, tomatoes and olives
2. Whip up a simple dressing with the vinegar and oil, then stir through. Garnish with the mint before serving
