Tomato, onion and feta couscous salad

Our tomato, onion and feta couscous salad is perfect for an easy lunch or an early evening dinner party. Enjoy with friends and family as the new season begins

Ingredients

  • 110g pack Waitrose tomato and onion couscous 
  • 200g Greek feta, cubed
  • 1 red onion, thinly sliced
  • ½ a cucumber, thinly sliced 
  • 270g cherry vine tomatoes, halved 
  • 30g Greek Kalamata olives 
  • 1 tbsp red wine vinegar 
  • 1 tbsp extra virgin olvie oil 
  • Fresh mint, chopped to serve 

Method

1. Prepare the couscous according to the pack directions, then mix through the feta, red onion, cucumber, tomatoes and olives

2. Whip up a simple dressing with the vinegar and oil, then stir through. Garnish with the mint before serving
