Ingredients needed:
250g self-raising flour (or plain flour + 2 tsp baking powder)
125g caster sugar
1 tsp ground cinnamon (optional)
1 large egg
150ml milk
100ml vegetable oil or melted butter
1 medium apple, pear, or 2 small plums (chopped small)
Optional: a handful of raisins or chocolate chips
Equipment needed:
Muffin tin
Paper muffin cases
Large mixing bowl
Medium bowl or jug
Measuring scales
Measuring jug
Wooden spoon or spatula
Whisk or fork
Small knife (for the grown-up)
Chopping board
Teaspoon
Oven gloves (for the grown-up)
Cooling rack (optional)
1. Preheat the oven to 180°C (160°C fan). Line a muffin tin with 12 paper cases.
2. In a big bowl, mix the flour, sugar, and cinnamon.
3. In a jug or separate bowl, whisk the egg, milk, and oil together.
4. Pour the wet ingredients into the dry ones and gently mix — it’s okay if it’s a bit lumpy!
5. Fold in the chopped fruit (and raisins or chocolate chips if using).
6. Spoon the mixture into the muffin cases — fill them about 3⁄4 full.
7. Bake for 20-25 minutes until risen and golden. A grown-up can test with a skewer — it should come out clean.
8. Let them cool, then enjoy!
