Eggy Brioche and Bacon

Eggy bread, pain perdu or French toast - this classic breakfast dish has plenty of names and just as many options for toppings. This decadent version comes with crispy bacon and maple syrup and delivers big on the comfort front.

Ingredients:

Serves 2

  • 2 large eggs
  • 1 tbsp milk
  • Seasoning
  • 2 slices of brioche
  • Olive oil
  • 4 rashers of crispy steaky bacon
  • 25ml maple syrup

Method:

  • Crack the eggs into a mixing bowl and add the milk
  • Season and gently whisk with a fork, then put to one side
  • Dip the brioche bread into the egg mixture, turn over and leave to soak it up
  • Place a frying pan on a medium to low heat and add a little oil
  • Lift out the soaked bread and add to the pan
  • Cook for 2-3 minutes on both sides
  • Place the bread on a plate and add the crispy bacon
  • Finish with a drizzle of maple syrup
