Mac and cheese toastie

Mac and Cheese Toastie

Ingredients

Serves 2


For the Macaroni Cheese

  • 250g macaroni
  • 40g butter
  • 40g plain flour
  • 600ml milk
  • 250g grated mature cheddar cheese

 

Toastie Cheese Topping:

  • 20g cheddar cheese
  • 5g wholegrain mustard
  • 5ml milk

 

For the Toastie:

  • 2 slices white rustic bread
  • 3 slices cheddar cheese
  • 100g macaroni cheese
  • 25g Cheese topping

Method:

For the Macaroni Cheese:

  1. In a large pan, bring to the boil some water and add a pinch of salt
  2. Add the macaroni and cook for 10 minutes
  3. Drain off and lay flat on a baking tray until needed
  4. In a different pan, gently simmer 500ml of milk
  5. Add the butter and cheese and allow to melt in the milk
  6. In a mixing bowl, whisk together the flour and the 100ml of left-over milk
  7. Add this mixture to the simmering pan and constantly stir until combined and thickened
  8. Leave to cool and refrigerate while you make the cheese topping
  9. Then bring the required amount of cheese sauce into a pan and slowly heat on a low heat
  10. Once warm add the cooked macaroni and cook for 4 minutes
  11. Serve as a main dish or add to our Toastie recipe

    Toastie Cheese Topping:

    1. In a mixing bowl bring all the ingredients together and store in the fridge until required to use

    For the Toastie:

    1. Pre-heat the oven to 220 degrees Celsius.
    2. Lay out the 2 slices of rustic white bread and place 2 slices of the cheddar cheese on one slice.
    3. Then top with the macaroni cheese
    4. Sandwich the macaroni with the remaining cheese slice and the other slice of bread
    5. Place the sandwich on a baking tray lined with parchment paper and cook in the oven for 8-10 minutes.
    6. Top the toastie with the cheese topping, being very careful as all the ingredients will be extremely hot, and grill until melted
    7. Slice and serve
