Recipe: Spiced Parsnip & Pear Soup


Try our spiced parsnip and pear soup recipe from our Restaurant Development Manager, Adriano Trebbi.

Serves 4

• 1 pear, peeled and chopped
• 2 large parsnips, peeled and diced
• 50g butter
• 1 onion, peeled and diced
• 1 celery stick, chopped
• 600ml vegetable stock
• 100ml low-fat natural yoghurt
• 2 tsp curry powder
• 1 pinch of salt
• 1 pinch of pepper

1. Place pan over a low-medium heat and melt butter
2. Add onions and curry powder, then cook gently for 2-3 minutes until the onion is slightly softened
3. Add the parsnip and celery, cook for a further 5-6 minutes
4. Add the pear and vegetable stock, bring to the boil
5. Lower the heat and simmer for 35-40 minutes
6. Remove from the heat and stir in the yoghurt
7. Transfer the soup into a blender, blitz until smooth
8. Season the soup, return it to the saucepan and warm through
9. Finish with Parmesan shavings or natural yoghurt.
