Recipe: Speedy Mince Pies

Makes 12 mince pies, 30 minutes. 

Mince pies are lovely whatever, but they’re out of this world when made at home. Just follow these simple instructions for a great taste of Christmas.

Ingredients:

  • 2 sheets of ready rolled shortcrust pastry
  • Flour
  • 1 jar of mincemeat
  • Ground almonds
  • Milk
  • Demerara sugar

Method:

1. Unroll a sheet shortcrust pastry on a floured surface and lightly mark out 12 squares. Put a blob of mincemeat in the middle of each square followed by a small sprinkle of ground almonds, brush round the edge of each blob with a little water.

2. Unroll the other sheet and lay it on top of the bottom one. Press down around each blob of mincemeat and then cut out your mince pies using a knife, pasta cutting wheel or cutter to make whatever shape you like.

3. Transfer to a baking sheet, make a small cut in the top of each and brush with milk, sprinkle with demerara sugar and bake at 180C/fan 160C/gas 4 for 30 minutes.
