Recipe: Red Curry Chicken Kebabs

Serves 2


  • 2 x skinless chicken breasts.
  • 2 tbsp thai red curry paste.
  • 2 tbsp coconut milk.
  • Small handful of chopped coriander.
  • 1 x red pepper.
  • 1 x red onion.

How to make: 

  • Cut 2 skinless chicken breasts into large chunks.
  • Tip the chicken, 2 tbsp Thai red curry paste, 2 tbsp coconut milk and a small handful of chopped coriander into a bowl, and mix until the chicken is evenly coated.
  • Chop 1 red pepper and 1 courgette into chunks and 1 red onion into large wedges.
  • Thread the vegetables and chicken onto skewers.
  • Cook for 5-8 minutes on a barbecue or griddle pan, turning every so often until the chicken is cooked through and charred.
  • Serve with herb rice, salad and a lime wedge.



Always have safety in mind, keeping firelighters and fluid well away from flames. It won’t hurt to have a bucket of water or damp towel on hand too, just in case things get out of control.
