Pimm’s and strawberry jelly with orange cream

Not one for the kids, jelly gets a grown up look with a Pimm's and strawberry twist. Complimented with orange cream, this simple recipe will let you hold on to that summer feeling as the autumn months close in.

1. Soak the gelatine in cold water until soft (around 2 minutes), meanwhile heat half the lemonade until it begins to boil and remove from heat.

2. Remove gelatine from cold water and slowly stir into the lemonade until dissolved.

3. Add the Pimm's, lemon and lime juice and the remaining lemonade. Pour the liquid through a sieve into a bowl and refrigerate the mixture until it has set.

4. Lightly whip the cream before stirring in the sugar, orange zest and half of your sliced strawberries.

5. To serve, layer the jelly, remaining strawberries and orange segments in a glass. Add a finishing touch with a top layer of orange cream, a touch of zest and a spring of mint. 

Taking only 20 minutes to prepare (plus setting time) you can create this tasty dessert to impress up to 6-8 people.   


What you'll need

Leaf Gelatine (3 sheets)
Lemonade (400ml)
Pimm's No. 1 Cup (175ml)
Lemon (1/2, juiced)
Lime (1/2, juiced)
Double Cream (284ml carton)
Caster Sugar (2 tbsp)
Oranges (2 peeled and segmented, plus the zest of 1)
Strawberries (250g, without stalks)
Mint Sprigs (to decorate)
