Recipe: Eton Mess

Eton Mess New LARGE
15 minutes - Serves 4 - Easy


  • 150ml
 whipping cream
  • 150ml fat-free Greek yoghurt (or 0% fat Greek yoghurt for a lighter Eton Mess option)
  • 1 tsp vanilla extract
  • 2 tbsp icing sugar
  • 300g
 small strawberries
  • 50g ready-made meringues, crushed

How to make:

  • Whip the cream and yoghurt with
the vanilla extract and 1 tbsp of the icing sugar.

  • Put half the strawberries in a food processor with the other tbsp of icing sugar and whizz to a purée.
  • Quarter the rest of the strawberries.
  • Layer the cream mixture, crushed meringue, strawberries and purée in glasses, ending with some strawberries and purée on the top.
