Recipe: BBQ Portobello Burgers

Serves 2


  • 2 tbsp Dijon mustard.
  • 1 tbsp Balsamic vinegar.
  • 2 large Portobello mushrooms.
  • Beefsteak tomato.
  • 2 x Ciabattta rolls.
  • Red onion.
  • Rocket.

How to make: 

  • Mix 2 tbsp Dijon mustard with 1 tbsp balsamic vinegar.
  • Brush half the mixture over 2 large portobello mushrooms and season well.
  • Barbecue for 2-3 minutes each side.
  • Put 2 thick slices beefsteak tomatoes on top and barbecue for a further minute.
  • Spread the remaining mustard sauce over 2 sliced and toasted ciabatta rolls.
  • Add the tomato and mushroom, some sliced red onion and a handful rocket to each.




Keep mosquitoes at bay by lighting citronella candles – they’ll add a pretty perfume to the air and help to create atmosphere as the sun goes down.
