Savoury Apple Pie

Savoury Apple Pie LARGE
If you are lucky enough to have your own apple tree, this recipe is a great way to help use up your delicous apple crop. A savoury twist on a traditional apple pie, this is a delicous main or side that takes its lead from the ever-tasty ploughman's.

  • 6 assorted apples, use any of your favourites
  • 50g butter
  • 4 tbsp Madeira
  • 250g butter
  • 250g plain flour
  • 100g parmesan, grated
  • 100g breadcrumbs
  • 4 sprigs lemon thyme, picked

How to make:

  • Turn your oven on to 200°C or gas mark 6.
  • Start by peeling, coring and chopping your apples into rough chunks.
  • Then, with a generous amount of butter, stew them in your casserole for 10 minutes with the lid on. After five minutes, pour in the Madeira.
  • For the savoury crumble topping, rub together the flour and butter in a large bowl, as you would any crumble, to form little bread-crumb like beads.
  • Now to make it savoury, mix in 80g/3oz of grated parmesan and the breadcrumbs along with the thyme.
  • By now the apples should be nice and soft, so simply scatter the crumble mix over the apples.
  • Grate over the remaining parmesan for good measure and pop in the oven for 25 minutes.
  • When the top is golden brown and the apples are bubbling serve as a savoury main or as a side, with roast pork or even sausages.

Leftover apples?

Once you've eaten the pick of your crop, why not try preserving leftover apples in syrup to create a delicious sauce to pour over puddings?

You could also use your leftover fruit to flavour spirits and create your own ciders or sloes.

Or you could always make some apple sauce to accompany roast pork.
