Roll over burgers! Instead try a zesty lamb chop recipe with a difference and classic BBQ ribs.
Lemon Thyme Lamb Chops - Serves 4
Ingredients:
• 8 lamb cutlets or 4 lamb leg steaks
• 3 table spoons of olive oil
• The juice of 1 lemon
• I tablespoon of thyme
• Salt and Pepper
Method:
• Mix the olive oil, lemon juice, thyme, salt and pepper together in a bowl and brush over the surface of the chops
• Cover the chops and leave to marinate on the fridge for at least 1 hour, preferably 2 hours.
• Ensure the BBQ is pre-heated and place the lamb on the BBQ grill and brush with any remaining marinade. Grill the meat for a maximum of 15 minutes or until the meat is cooked to your liking. For lamb this should ideally be medium rare to medium. Turn the meat half way through cooking.
Classic BBQ Ribs - Serves 4
Ingredients:
• 1.8 kg (4 lbs) of meaty pork belly ribs
• 2 tbsp tomato puree
• 3pints of water
• I onion (chopped)
• 3 garlic cloves (crushed)
• ½ tsp chilli powder
• ½ teaspoon of black peppercorns
Method
• In a sauce pan bring to boil the water, tomato puree, garlic, chilli and peppercorns, then simmer for 15 minutes
• Add the ribs and simmer for about 40 minutes then leave to cool.
• Take ½ pt of the mixture from the sauce pan and bring to the boil in a smaller sauce pan until it is reduced to half.
• To make the BBQ sauce, add the molasses, onion, mustard, vinegar, lemon, Tabasco sauce and salt and pepper to the mixture and stir thoroughly over the heat.
• Brush the BBQ sauce over the ribs and place on the pre-heated BBQ on the grill for around 2 minutes each side.
