Fish is one of the easiest and tastiest dishes to cook on the BBQ. As long get the ingredients are right to suit your chosen fish, you’ll be onto a winner. Here are some suggestions:
Ginger and Lemon Halibut - Serves 4
Ingredients:
• 4 halibut steaks
• 1/3 cup unsalted butter
• ¼ cup brown sugar
• 1 tsp lemon juice
• 1 tsp fresh ginger (grated)
• 1 garlic cloves (crushed)
• 1 tsp soy sauce
• Salt and pepper
Method:
• Melt the butter in a pan and add the brown sugar, lemon juice, ginger, garlic and soy sauce. Stir and simmer for 2-3 minutes.
• Brush the raw halibut steaks with the sauce mixture, leaving enough sauce to brush the halibut with once it’s cooked. Season with salt and pepper to taste.
• Place the halibut on a pre-heated BBQ on the grill and cook for about 5 minutes each side or until the halibut meat is flaky.
• Brush the remaining sauce onto the halibut steaks before serving.
Tuscan Trout - Serves 4
Ingredients:
• 4 trout (heads removed, boned and butterflied)
• 4 tbsp unsalted butter
• 2 tbsp olive oil
• ¼ cup black olives (chopped)
• 2 tbsp Pernod
• 1 tbsp fresh parsley (chopped)
• 1 shallot (chopped)
• 1 tsp chives (chopped)
• Salt and pepper
Method:
• Sprinkle the 4 trout on both sides generously with salt and pepper and brush with the Pernod.
• Cover and let stand at room temperature for 30 minutes.
• Add the chopped shallot and olives to a blender and process until finely chopped.
• Add the butter, chives, parsley and some a sprinkling of pepper to the blender and process until well blended.
• Stuff the butterflied trout with the olive mixture and fold each fish to close. Secure each fish closed with a toothpick.
• Place the trout on a pre-heated BBQ on the grill and cook for 8 minutes on each side.
