Chicken is as versatile as your imagination and although BBQ food wouldn’t be complete without chicken drum sticks, here are a few tangy alternatives.
Ginger Chicken Satays - Serves 4
Ingredients:
• 1 kg chicken breast or thigh meat (cut into small cubes)
• 1 onion (chopped)
• 2 garlic cloves (chopped or crushed)
• 1 tsp ground coriander
• ½ tsp ground cumin
• ½ tsp chilli powder
• 1 tsp brown sugar
• 1 tsp freshly chopped ginger
• 2 tbsp soy sauce
• 1 tbsp ground nut oil
• The juice of ½ a lemon
Method:
• Create the marinate for your chicken satays (skewers) by mixing the onion, garlic, coriander, cumin, chilli, sugar, ginger, soy sauce, nut oil and lemon in a bowl.
• Add the chopped chicken meat to the mixture and stir well, coating the meat. Marinade in the fridge for 2 hours
• Once the meat has been left to marinade, put the chicken pieces onto 6 metal skewers. Grill on a pre-heated BBQ, on the grill for 5 minutes each side or until the chicken in thoroughly cooked throughout.
Citrus Chicken Burgers - Serves 6
Ingredients:
• 600g minced chicken
• 1 onion (grated)
• 85g bread crumbs
• 1 garlic clove (crushed)
• 1 stalk lemon grass (chopped)
• 2 tsp lime zest (grated)
• 2 tbsp fresh coriander (chopped)
• 2 tsp caster sugar
• rape seed or light olive oil for brushing
Method:
• In a large bowl mix together the minced chicken, onion, breadcrumbs, garlic, lemon grass, lime zest, coriander and sugar with your hands
• Mould the mixture into 6 burger shapes, then cover and leave in the fridge for 30 minutes
• Brush the burgers with the oil and place on pre-heated BBQ on the grill. Cook for 4 minutes on each side or until thoroughly cooked.
• Serve the burgers in a soft burger roll with coleslaw
