Crips thick white sticks make this plant ideal eaten raw in salads or coleslaws. Can also be cooked and served in a gratin or with cheese sauce.

Suitability
Plant in very fertile, moist soil, preferably in a trench to which well-rotted manure or compost has been added. Plant 20-25cm (8-10in) apart. Remove bad leaves and side growths. When the plants are 30cm (12in) high, earth up to blanch the celery. Plant March-May, preferably with a cloche or other frost protection.
