Spice things up a bit with a mix of different sides and accompaniments for your main BBQ meal, from authentic Greek dips to grilled banana and melted marshmallows
Tzatsiki dip
The Greeks use Tzatsiki as the staple for any summer BBQ. It’s bursting with fresh summer flavours- just add a dollop to any meat or vegetarian dish, (it’s not so good with fish).
Ingredients:
• ½ cucumber
• 2 garlic cloves (crushed)
• 2-3 mint leaves (chopped)
• 1 tbsp olive oil
• 250ml creamy Greek yoghurt
Method:
• Peel and grate the cucumber and then squeeze in your hands to drain off the juice
• In a bowl mix the garlic and oil and then add the yoghurt and mix through. Mix in the drained cucumber. Store the Tzatsiki in the fridge to keep it cool.
The essential marinade
There is such a thing as a miracle marinade that goes with everything you put on the BBQ. Just mix together 1 ½ cups of soy sauce, ½ cup of honey and 1 or 2 tablespoons of cinnamon to taste. Keep a bowl of this simple marinade next to the hot coals and brush on pork, chicken, lamb or even beef.
Fruit
Try adding a banana to the BBQ. Simply put it on the grill with the skin still on and wait until it turns black. It should be warm and gooey when you open it and you can add anything you want to it such as chocolate or cinnamon. Pineapples can also be cooked directly on the grill and summer strawberries are delicious placed in an open foil parcel with some sugar and lemon juice.
